Banana & Chocolate Muffins


I finally put my cake stand to good use after baking these tasty muffins!

Recipe

You will need:

3 mugs self raising flour, 1 mug brown sugar, 2 eggs, slightly beaten, 1 1/2 mugs milk, 3/4 mug vegetable oil, 2 over-ripe bananas and some cooking chocolate broken into pieces.

1. Preheat the oven to gas mark 6/180 C
2. Mash the bananas and break up the chocolate
2. Mix the dry ingredients together, then add the wet ones. Stir together.
3. Place muffin cases into a muffin tin
4. Spoon in the mixture and bake for about 20 mins. When done they should be light brown and spring back when gently pressed.

Simple enough!
